Too many shrooms?

If you've been reading my food journal during this experiment, you'd notice a trend: I like mushrooms. I put them in nearly everything I eat and cook:  sauteed at breakfast, tossed in EVERY salad, stir-fried and stewed in every dinner creation.  However, mushrooms don't get much press these days.  Are they nutritionally deficient? Nope!  Check out these stats and these and then tell me to lay off the shrooms.  They also have high levels of antioxidants that deter cancer!  Hooray!

Day 52 Food Journal:
-kiwi
-oatmeal
-salad, grilled asparagus with mushrooms (tried my first morel! Texture of steak, so Meat-lovers - you should give it a whirl!)
-apple
-leftover rice and roasted veggies, couple bites of pesto pasta
-orange, dough babies

  1. How was the morel prepared? Shrooms really are beneficial - I didn't know!
